Guava Cheese Pastries

It's happening once again.  My second little girl is getting married.  It is almost unbelievable that my little ones have grown up and are taking the next step to adulthood. Nicholas, my daughter Kailey's fiance, is Cuban.  One thing I can tell you about Cubans...they love their food! And guess what? I love their food too!  These little babies are one of the treats that I fell in love with at first bite! The Cuban Guava and Cheese pastries have been known to grace many Cuban dessert tables alongside a nice Cuban expressed coffee.  So when we started talking wedding plans, we all agreed that we needed these on the dessert table to bring in Nick's family's traditional food.   I decided that instead of buying them, I'd create my own easy version, perfect for breakfast, tea or a wedding treat, that costs less than buying them at a bakery. 
 
 

 
Guava Cheese Pastries
Puff Pastry (I used Pepperidge farm)
1 tub Whipped cream cheese
Guava Cream (I used La Cubanita that I bought at a mexican market)
sugar for sprinkling
 
Heat oven to 350 degrees.  Spray cookie sheet with non stick cooking spray. Unfold pastry sheet and cut on folds then turn and cut two more times making 9 squares.  Unfold second sheet and do the same to make a total of 18 squares.


 

Cut the guava cream into small slices about an inch thick and then cut each slice in half.
 
Put about a 1/2 tsp of cream cheese and a slice of guava cream on each square.  Fold in half or in a triangle and pinch edges together.  Sprinkle or dip top in sugar, poke top with a knife to make a small slit and bake for about 19 minutes or until browning.  Cool completely and enjoy!

"Coco-Rita" Coconut Margarita

 Recently Hubby and I went to the beach to have dinner with some friends. They took us to this gorgeous Spanish restaurant and told us we had to try the coconut margarita. One sip and I knew I'd have to create this recipe at home.  I lucked out and after one attempt, I think I nailed it.  Here is my version of a Coconut Margarita "Coco-Rita" that I know you'll love!

This baby is super simple and easy to make.  Trust me...
 
It'll be your new favorite adult beverage.

 
 
Coco-Rita recipe
 
1 can coconut cream (about 14 ounces)
1/4 c. sugar
1/2 lime squeezed
1/4 tsp vanilla bean paste or 1/2 tsp high quality vanilla
1/2 c. tequila
1 1/2c. ice
Rim glass with lime rubbed along edge and dip into superfine toasted coconut mixed 1/2 and 1/2 with white sugar
 
Put 5 first ingredients in blender and blend for about 3 minutes.  Add ice and blend until super smooth.  Pour into prepared glass.  Drift away to the tropics with this delightful heavenly flavor.
